When we were pulling together all of the details for our Pastel Pool Party, we wanted to find something that we could give to our guests as a little take away and memento to say thank you’ for coming, and this White Chocolate Confetti Popcorn turned out to be just the thing. Originally appearing on The Glitter Guide, Paige first made this recipe a few years ago at her one year anniversary party at the shop, and with it’s delicious mix of sweet and salty flavours and adorable pastel confetti sprinkled throughout, she knew it would also be perfect for this occasion.

Confetti appeared as a common theme throughout the Pastel Pool Party, with the most amazing confetti-filled cake by The Wedding Cake Shoppe as the centre piece of our sweet table and custom pastel confetti from The Confetti Bar sprinkled atop our tables, in the balloons and tossed in the air, so the White Chocolate Confetti Popcorn was the perfect complement.

 

Recipe //

1/2 tbsp Canola Oil
1/2 cup Popcorn Kernels
Salt
6 oz White Chocolate Wafers
1/4 cup Confetti Sprinkles

1 // In a medium saucepan, pour in canola oil and heat over medium heat. When oil is hot, add popcorn kernels, making sure all the kernels are touching the bottom of the pan. Cover with a lid and wait until you hear kernels start to pop. Once they commence, grab the pan; while simultaneously holding down the lid, give it a good shake. Return pan to the stove and repeat a few times. This will ensure that all of the kernels pop. When popcorn is done, turn off heat, transfer to a medium bowl, and add a few pinches of salt.

2 // Add about 1-inch of water to a double boiler (or a saucepan with a metal bowl nestled atop – this is what I’ve always done and it works great). Heat over medium-low, watching the chocolate the entire time. White chocolate has a lower melting point, so it can seize easily. When chocolate is melted, stir until smooth.

3 // In a few batches, pour chocolate over popcorn, mixing gently to coat each kernel lightly.

4 // Evenly spread popcorn onto a baking sheet and add confetti sprinkles. Let popcorn sit for 3-4 hours (or until dry).

5 // Enjoy! We packaged ours in little clear cellophane bags for our guests to take home, and also had bowls of it on our sweet table for everyone to enjoy at the party.
